For first time visitor, go for sigekiya ramen or tsukemen gyokai. Serving size is bigger than most ramen restos but you can choose the serving size that suits your stomach capacity :)
The spice level could be adjusted from no spice up to level 100. Unless you really like spicy food , I recommend anything from level 3-5. The gyoza is one of the best in town
